TASTING NOTES

This Darling Sauvignon Blanc has a light-straw colour with a seductive green tint. The nose and palate are entertained with expressive notes of sweet bell, fragrant lemongrass, and hints of green fig. The integrated natural acidity creates a balance, sculpting the palate with a pleasant mouth filling texture

VINEYARDS

The grapes are sourced from one block that is split in three sections on a farm in Darling. The block is picked on two different dates. An early picking captures the natural acidity and green flavours, where the second picking commence later, to uplift and sculpt the texture on the mouthfeel. The 24 year old bush vines are planted in decomposed granite. Furthermore, the site, elevation and climate, allow for a true representation of the uniqueness that defines Darling as a region.

WINEMAKING

The grapes were handpicked in bins during cool early mornings. A combination of overnight skin contact versus 3 hours on the skins were used for optimum fruit extraction, but still obtaining the natural acidity. To ensure only the purest of juice is extracted, a delicate pressing cycle is used resulting in a lower juice recovery. After the juice settled clear for two days, we inoculated the juice with a selected yeast strain. Fermentation occurred in stainless steel tanks at 12-15°C. After fermentation the wine was kept on the fine lees as long as possible. Regular stirring of the lees allows for an enhanced and fuller mouthfeel.
