BACKGROUND
The word appassimento is Italian for “Passionate”. The word passion is exactly
what brought us on our Appassimento journey. It was a journey of exploring, pushing the boundaries and setting new challenges for us, in creating this unique concentrated wine. Three methods can be used to create this style of wine from naturally dried grapes. The method that we applied, was using pliers to pinch the stem of selected grape bunches while they ripen on the vine. The pinching action stops the translocation of fluids into and out of the grapes and allows them to dry naturally on the vine. This method allows us to achieve greater concentration of colour, aromas and flavour in the wine. The 2021 is our maiden vintage for The Pledge Our Passion Appassimento 2021.
